Tasty Summer Salads
Salads don’t just have to be an after thought at a BBQ or a limp pile of lettuce leaves for lunch; they can be a delicious and colourful addition to your dinner table.
Here at Soft &Gentle, we have tried and tested four mouth-watering recipes that will convert even the biggest salad-phobe!
Greek-style lentil & barley salad
Conjuring up visions of white washed buildings lining a crystal blue sea, this take on a Greek salad will not only fill you up but will set your taste buds tingling with sharp feta cheese and fresh tomatoes. Just don’t go smashing your best china!
Halloumi, courgette green bean and tomato salad
Originally from Cyprus, Halloumi cheese is used throughout the Middle East in cooking, its high melting point makes it ideal for grilling and its salty flavour and layered texture gives this salad a delicious boost complementing the green beans. Yummy!
Tenderstem®, Rye Kernel and Tarragon Salad
This salad originates from Scandinavia. The Nordic way of eating is well known to be healthy and nutritious and this salad is both! Combining textures and flavours to create a moist and crunchy salad (unfortunately it is not on the menu in Ikea!)
Originating in New York and named after the hotel “Waldorf-Astoria”, a Waldorf salad combines grapes, walnuts and celery on a bed of crispy lettuce. An episode of the sitcom Faulty Towers was named after the salad however, to be clear it contains no “Basil”.
