Summer is here and suddenly soup and beans on toast are looking less appealing! We are finding ourselves spending more money on grabbing fresh sandwiches and salads from the supermarket rather than planning ahead. So to get us back on track here are three ideas for a healthy lunchtime alternative.

For those of you who love a sarnie why not try this super delicious green club sandwich? It is bursting with goodness and will keep you fuller for longer to help avoid those naughty afternoon snacks.

Tortilla treat

With only 199 calories per portion this tortilla makes a healthy and tasty lunch. Prepare the night before and eat cold or reheated. We added a small green salad and strips of plain chicken for a lunchtime feast!

Farro-way dreaming

Keeping the beach body in mind we prepared a big batch of this on Sunday night and ate for four lunch times (well Friday is treat day right!?) If you can’t find Farro in the shops add some cooked barely instead.
